Dierendonck

Hendrick Dierendonck vertritt die Meinung, dass Fleischerei ein Handwerk ist, welches traditionelle Werte mit modernen Verfahren verbindet. In der Provinz Westflandern und über Belgiens Landesgrenzen hinaus verbindet man mit dem Namen Dierendonck Fleisch von höchster Qualität. Denn der Metzger aus Leidenschaft widmet sich dem ganzen Tier, statt sich nur seiner Edelschnitte, zum Beispiel aus der Pistole vom Rind zu bedienen. Die Tiere, die Hendrick Dierendonck verarbeitet, stammen teilweise vom französischen Nachbarn, aber auch aus Italien und Schottland. Ein Teil der Fleischwaren produziert er über seinen eigenen Betrieb und vermarktet sie u. a. auch in seinem eigenen Restaurant (1 Michelin Stern). Zusammen mit Landwirten aus der Region hat er sich zudem der Erhaltung der alten Westflämischen Rinderrasse verschrieben.
