Der Taleggio ist ein traditioneller Käse aus der Lombardei mit geschützter Herkunft. Der italienische Weichkäse wird aus pasteurisierter Kuhvollmilch hergestellt und entwickelt eine dünne Rotschmierrinde. Sein Teig ist kompakt und weich, im Geschmack ist er mild und cremig. Der Taleggio schmeckt köstlich auf einer Käseplatte, eignet sich aber auch hervorragend zum Überbacken von vielen Gerichten sowie als Raclette-Käse.
