Jamones Ibericos

Die Schinkenspezialitäten des iberischen Schweins suchen Ihresgleichen. Haben die hochbeinigen, dunkel pigmentierten Pata Negra (span. pata negra=schwarze Klaue) ihr Leben meist freilaufend in der Extremadura verbracht, werden sie reichlich Eicheln aufgenommen haben. Die Früchte der Korkeichen und 100-jährigen Steineichen der Kulturlandschaft Dehesa geben ihrem marmorierten Fleisch einem nussig-öligen Geschmack, weshalb man das cerdo Ibérico auch Olive auf vier Beinen nennt. Bereits seit 1932 macht Familie Blazquez aus Guijuelo in Jamon und Paleta von iberischen Schweinen, also Schinken aus der Keule und aus dem Blatt bzw. Vorderlauf. Die Blázquez schlachten die Schweine mit ca. 16 Monaten, dann wiegen die Cerdo Ibérico bis zu 190 kg und haben 1-2 Montanera-Phasen durchlaufen. Sie lassen ihre Jamones 3-5 Jahre zur Vollendung reifen.
